  • 1 kg of veal
  • 1 candied lemon (pulple and peel)
  • 2 crushed garlic cloves
  • 1 tsp cumin
  • 1 tsp ginger
  • 1/2 tsp salt
  • 125 ml olive oil
  • 2 minced onions
  • salt (be careful the lemon and olives are salted personally
  • I don't wear it)water
  • 1 tsp smen
  • a good pinch of saffron
  • 250gr pitted green olives 

How to prepare

  • put the spices in a pot or pressure cooker except cumin
  • add the smen the garlic, the onion and the oil and the candied lemon ecocre
  • brown the meat for a few minutes to add the water and cook your tagine the sauce should be well reduced at the end of cooking add the cumin and olives and the peel of the candied lemon
